Health-Giving Notes.

It’s about time that we can live in a world where brownies aren’t the enemy. This hearthy brownie recipe is the perfect answer to your need for a healthy dessert or treat. I prefer the taste of walnuts in these brownies, but feel free to use any other nut you like, including raw pecans or almonds. These brownies are perfect for kids, too.

Raw Energy Brownies

1⁄2 lb raw walnuts

1 vanilla bean, seeds scraped (or 1⁄2 teaspoon alcohol-free vanilla extract)

1 cup raw cacao powder

1/8 teaspoon sea salt

1 teaspoon maca powder (optional)

1⁄2 lb pitted soft medjool dates

1 tablespoon maple Grade B syrup (optional - you can add more if you want the brownies a little sweeter)

additional good cacao powder, for coating (optional)

Place walnuts and vanilla in a food processor and blend until the nuts are finely ground.

Add cacao, maca, sea salt and process until everything is evenly combined (you might have to scrape the sides down).

With the motor running, drop dates one by one through the feed tube until the mixture comes together. The mixture will be what should hold together when pressed.

Taste and see if you need to add any maple syrup, and then pulse until everything is well mixed.

Transfer the mixture into an 8x8 inch pan, and press down firmly using your clean hands.

Refrigerate for at least half an hour before cutting. Store in the fridge to preserve.

You can eat these cold, or allow them to come to room temperature, which I prefer.

Cut in squares and decorate them with cacao powder with a walnut on top.
